Bolton remembered her grandmother, who had been a cook for a duchess during World War I. Bolton’s “nan”, as she fondly called her, was famous for her pastries, especially her puddings and meringues. She passed her recipes to her eldest daughter, who then passed it on to her daughter, Bolton. Inspired by the legacy of her grandmother, Bolton decided that she wanted to do enter the food business.
While looking for a place to have coffee in Southeast London, Bolton suddenly had the urge to go to a tea shop. She ordered her favorite dessert – lemon meringue pie – and had a eureka moment. She decided to market her granny’s famous desserts, particularly the meringue. So, she registered Head in the Clouds – the name she gave her business – and got busy in the kitchen.
Bolton had created over 40 flavors, which included white chocolate, raspberry, and yes, even alcoholic meringue. Bolton did all the cooking in her house in Faversham, Kent – baking from 7am till 11pm.
Sure enough, word about Bolton’s assorted meringue spread around town. Customers came to the executive-turned pastry chef through recommendations, and pretty soon Head in the Clouds was invited to participate in country fairs. She was also featured on Sky TV and was declared a runner up in the Kent 2020 Innovation Awards. Thanks to a chef friend working in California, Bolton’s brand became known as global brand.
Although her mother and grandmother did not live long enough to see her recipe for recovery, Bolton is sure that her mentors are happy to see their legacy shared to others through Head in the Clouds.
